Hand roasting is a deeply dynamic combination of art and science, consisting of a balance of perfect timing, intuition, taste, and true craftsmanship. At the helm of our coffee production are our Master Roasters who start the roasting process with the finest green coffees and carefully apply a continuous evaluation of color, aroma, and sound. The beans are transformed by the perfect combination of heat, airflow, and timing through the use of our Diedrich Drum Roaster, a technology world renowned for its ability to provide the optimum environment for roasting every varietal of coffee bean. Let’s face it; it all starts with the bean! The origin, the varietal, the elevation and, of course, the hands that tend to it. We carefully select samples from around the globe. Whether from a farming co-op in the highlands of Northwest Peru or a small coffee estate from one of our friends in Guatemala, we source only the highest quality green coffee and are committed to purchasing only green coffee that is ethically sourced (ie either Direct Trade, Fair Trade Certified, or Rain Forest Alliance Certified). In addition, all of our coffee is either certified organic or grown using sustainable natural and organic farming methods. It’s a belief that started from the day we opened our doors. It’s a simple truth that true quality cannot be achieved without social, environmental, and economic sustainability, whereby the land is valued, the people who farm it are treated with dignity and respect, and they are guaranteed a premium price for their hard work. We believe that it is not only the right thing to do as a company, but this practice produces a better cup of coffee.
